Maturation Shiraz & Viognier fermented together; last part of fermentation completed in foudre; Mourvedre and Grenache integrated into blend after fermentation; further 24 months maturation in French oak foudre. In bottle pre-release 6-9 months with an ageing potential of 6-8 years and longer.
Altitude 210-289m, Soil Well-drained; good water retention. An important percentage of clay in the topsoil, Yield 6.5 tons per hectare (45hl/ha)
Maceration 3-4 days cold maceration before fermentation; +-3 punch-downs per day
