A splash of Semillon to our wood matured Sauvignon blanc demystifies her myth. Her well-developed structure and textured complexity match the taste that can be expected from a Wine of Origin Sondagskloof. The wine is primarily made from Sauvignon blanc, with a potentially small percentage of Semillon.
Maturation Fermented in 1st, 2nd and 3rd fill 500ltr French oak barrels on secondary lees. The barrels are rolled monthly and then bottled pre-release at 12 months. The grapes have an ageing potential of 5 years and longer.
Altitude 287-338m, Soil Well-drained; good water retention. An important percentage of clay in the topsoil. Yield 8 tons per hectare (55hl/ha)
